Chef Sanjana Patel is the Executive Pastry Chef at La Folie Patisserie, Mumbai, which she founded in 2014.Her journey is an aptly sweet one, and started at an early age. She developed her passion for desserts by completing a diploma in confectionery technology and a postgraduate degree in food management in London,and by interning at local pastry shops.

Sanjana moved to Paris, where she was soon accepted at Ecole Grégoire Ferrandi, one of the most respected pastry schools in the world. She started her career with an apprenticeship at Pierre Hermé, followed by stints under master pâtissier Emmanuel Ryon of Café Pouchkine and chocolatier Jean-Charles Rochoux. Upon completing her masters in pastry arts at Olivier Bajard’s school, she worked at Le Meurice and Plaza Athénée, hotels of The Dorchester Collection, under Chef Christophe Michalak and the Alain Ducasse Group.

Her experience sparked new ideas for flavours, while refining her technical skills and aesthetic. Sanjana’s strengths as a tastemaker and craftswoman are evident in every one of her creations at La Folie. Her passion and infectious energy keep her growing fan base on their toes. She is looking to expand La Folie to other locations in Mumbai, and open India’s first ‘progressive dessert atelier’. Her avant-garde style in creating desserts has earned her titles like ‘The Scientist’, ‘Game Changer’ and ‘The Original’.




Parthesh Patel, Partner at La Folie, brings to the table over a decade of cross-industry expertise with experience in creating strategies, overseeing customer services and guiding execution in the field of hospitality.At La Folie, he is responsible for business development and strategic guidance pertaining to the local market,and uses his global outlook to assist with the brand. Being travellers, Sanjana and Parthesh ideated the concept of La Folie during their constant visits to France, and decided to introduce it to the Indian market.

Prior to this, Parthesh has worked with well-known companies like Larsen & Turbo Ltd., FIAT India Automobiles Ltd. Mumbai, and Essar Global Services Ltd., London, to name a few. His strong educational background, having completed his MSc in Management from Imperial College, London, and an Honours Degree in Mechanical Engineering from the University of Liverpool has guided his universal approach to the brand.
