The Mango Velour Cake is built on a light foundation of tender vanilla and lime zest sponge, which introduces a fragrant, clean element to anchor the richer components. At its center lies a smooth layer of Ratnagiri Alphonso mango whipped mousse that lends a melting, velvety depth to every bite. This richness is immediately cut by a bright, tropical mango and pssionfruit compote with fresh mango pieces providing a sharp contrast. The dessert is then layered with a delicate Mogo Mogo tea Vanilla Bean Chantilly cream for a sublime floral note, before being finished with mango dehydrated leather and fresh cubes of Mango. All set upon a lime Sablé .
